Cookie time is here again!

It's that magical time of year -- we're delivering our famous cookies to your offices. If you're hankering for the recipe, you're in luck.

Inland Medical’s Chocolate Almond Shortbread Cookies


3 sticks butter, softened

1 Tbsp. almond extract

3 cups all purpose flour

1 ¼ cups powdered sugar

1 tsp. vanilla extract


Guittard dark chocolate discs

1 ½ cups toasted sliced almonds

Beat together butter and sugar at slow speed until just mixed.  Beat in extracts. Gradually beat in flour until a soft, crumbly dough forms. You can also use your hands because you don't want to overwork the dough.  Chill for 30 minutes.  Roll to a ½” thickness and cut into desired shape.  Bake at 325 until just barely brown on the edges, about 9 minutes.

After cookies have cooled, melt the dipping chocolate (70% power in a microwave is good). Dip half of each cookie into chocolate and sprinkle with toasted almonds.  Let cool again on waxed paper.

Makes about 2 dozen cookies, depending on size.
